Feeling Frostbitten? Our Resident Wellness Coach Has Just The Soup For You

 

I am grateful to my friend, Howard Harris, for sharing this incredible recipe with me last winter.  It has become a weekly staple in my house without a doubt!  This is the easiest, yummiest soup you will ever make and is great for taking as leftovers to work!

4 medium potatoes (peeled and chopped into small pieces, Yukon gold work great)

2 cups (or slightly more) kale, roughly chopped

1 medium onion, peeled and chopped

8-12 peeled garlic cloves

1 1/4 tsp sea salt

freshly ground black pepper

good quality extra virgin olive oil

6 cups water or vegetable stock

Optional: fresh Parmesan or plain yogurt

In a large pot, combine the potatoes, garlic, onion, kale and salt.  Add 6 cups water and bring to a boil.  Cover, lower heat and simmer for 1 hour and 15 minutes.  In several batches, transfer the soup to a blender or food processor and blend into a creamy, smooth texture.  Serve hot with a sprinkle of fresh Parmesan cheese or a dollop of plain yogurt. Enjoy!

TIP: Freeze leftovers and reheat this soup for a warming, healthy meal on days when you feel you have no time to cook a healthy meal!  It’s warm, nourishing and packed with calcium, potassium and tons of goodness!
